BUTTER BING, BUTTER BOOM! 💥

Chewy, Crispy Double Vanilla Cashew Butter Snack Bars

These healthy and crispy Double Vanilla Cashew butter bars have the chewy texture of a Twix, the crunchy bite of a Crunch bar, and the snap of a Kit Kat. I am strongly considering turning this concoction into a chocolate bar. Until then, here's the recipe:

💥INGREDIENTS --

1️⃣ Base Layer:

-1 c. rolled oats
-10 deglet noor dates
-1/3 c. Double Vanilla Cashew Butter (or any other nut butter of your choice!)
-1/3 c. Honey
-1 tbsp water
-1 c. Quinoa puffs

2️⃣ Middle Layer:

-1/2 c. Double Vanilla Cashew Butter (or any other nut butter of your choice!)
-1 tbsp coconut oil
-2 tbsp maple syrup
-1/4 tsp cinnamon (optional)
-1/4 tsp ginger (optional)

3️⃣ Top Layer:

-175 g (or 1/2 c.) Chocolate chips

PROCESS --

🌰Base Layer:

1. Mix all bottom layer ingredients EXCEPT water + puffed quinoa in a food processor. Add water, as needed to help and scrape sides as you go. Once blended, you should have a large semi-sticky ball of goodness.
2. Transfer the blend to a bowl + add puffed quinoa, folding and mixing by hand.
3. Once fully homogenized, transfer to a brownie tray layered with parchment paper.
4. Roll out and flatten in the tray evenly (this may require some patience!)
5. Place tray in freezer.

🌰 Middle Layer:
1. In a saucepan, add all middle layer filling ingredients on low heat, stirring regularly to avoid burning.
2. Once fully mixed spread evenly over quinoa base layer and return to the freezer for 30 minutes.
🌰 Top Layer:
1. Melt chocolate. Depending on the kind of chocolate you use, you may need to had a touch of coconut oil to help with even melting.
2. Add the final layer of melted chocolate evenly over the frozen middle layer amd return to freezer for 15 minutes.
3. Cut into squares and enjoy!
4. Store in freeze for prolonged enjoyment!
