SPICED CASHEW BUTTER CHICKPEA TRUFFLES aka NUT BUTTER BALLS
Ready, set, make!
This recipe is easy-peasy. Modify, adapt, and change as you deem necessary. Guaranteed to be a guilt-free addiction, primed to satisfy and please.
Packed full of nutrients, protein, and fiber, these healthy and delicious truffles are dark chocolate dipped with a creamy, cookie-butter-like textured at the center. This kind of yum should be illegal.
💥SPICED CASHEW BUTTER CHICKPEA TRUFFLES aka NUT BUTTER BALLS💥
🌰INGREDIENTS:
- 1 can of chickpeas, drained + rinsed
- 1/2 c. Three Nuts Spiced Cashew Butter (or your preferred nut butter)
- 3 deglet noor dates
- 1 tsp tahini
- 1 c. chocolate chips
- Optional: coconut oil for melting (~1 tbsp)
🍴STEPS:
- In a food processor, blend chickpeas, dates, tahini, and nut butter. Set aside.
- Prepare parchment paper on a tray and use a cookie scoop to make balls of dough of the chickpea-nut butter blend on the tray.
- Freeze for 10-15 minutes.
- Meanwhile, melt chocolate.
- Once frozen, dip butter balls in chocolate and place back on parchment paper.
- Place butter balls in fridge or freezer until chocolate is solid.
- Store in the fridge for up to a week or in the freezer for up to 2 months.
💡PRO-TIP: Up the ante on these and add your favorite protein powder to increase overall protein content.
